  • The chicken experiment: Eijkman observed that chickens fed polished (white) rice developed neurological symptoms resembling beriberi, while those fed unpolished (brown) rice did not. This accidental observation led to the identification of a “protective factor” in rice bran — later recognized as vitamin B1 (thiamine).
  • Germ theory bias: Eijkman initially searched for a bacterial cause of beriberi, as germ theory dominated medical thinking. The nutritional explanation emerged despite his theoretical framework, illustrating how paradigms can both enable and constrain discovery.
  • Delayed recognition: Eijkman received the Nobel Prize in 1929, decades after his key observations, and the full biochemical role of thiamine was understood only later still. Attribution in science is rarely straightforward.
